Since recently being converted on spiked desserts — thank you, Margarita Cheesecake Bites— I’ve gone all in. Turns out, a little bit of booze can take an already delicious dessert to new heights. Case in point, these ultra-decadent Bailey’s Brownie Cups. A fudgy brownie base combined with a fluffy yet rich, chocolate-y, spiked filling? Yeah, you had me at Bailey’s.
When we first saw a variation on these on Liv For Cake, we were very intrigued. We just had to try them for ourselves. In true Delish fashion, however, we did some tinkering to make ’em a little easier and quicker.
First, we strayed from her chocolate cookie base into boxed brownie territory. If you want to whip up a homemade cookie crust, more power to you. But, the boxed brownie provides ease and …edges. Yes, chewy brownie crust lovers, this one’s for you. Bake the batter in muffin tins, then once they’re out of the oven, press into them with a shot glass to make a cup. Voila: brownie cups!
Onto the filling. It tastes like a Mudslide living its best life. In short, it’s perfection. Think of it like a fluffier, chocolate-laced, Bailey’s no-bake cheesecake. Instead of whipping cream here, we opted for good ol’ Cool Whip to provide that addicting, fluffy texture. Another bonus: ours doesn’t need any time to set in the fridge. Just whip it up and scoop it into the cooled cups.
Top it off with mini chocolate chips and you’ve got the cutest (seriously, look at them!), most delicious, spiked dessert for any occasion.
